Why I Run

10174919_10152040137081732_60737826_nSpring has arrived in Vermont. And as much as I have been hoping for a couple more days on the ski trails that is just not in the cards. Let’s hope the weather gods shine down on us next winter with better conditions.

But with the melting of the snow brings longer days, chirping of the birds, budding trees and one of my favorite spring time renewals: running. For real runners I’m a jogger. Slow and steady and certainly not built for speed. Continue reading

Across the lake: Lake Placid Winter Style

The winter does not bring many trips home, even less now that the camp is closed until Spring. So Mom and I decided to make a weekend rendezvous in Lake Placid for a belated bday celebration.

I started the day off early, to make it over to the Cascade Cross Country Ski Center. It was perfect. The snow was heavy and wet – and for speed demon advanced skiers probably not the best – but for a newbie like me it was perfection. The trail was slow, and allowed me to work on turns and hills that I wouldn’t be able to tackle on faster days.  Cascade also hooks up with Jackrabbit Trail which I investigated for bit, but definitely will have to explore more next winter.

Mom and I met up at the Brown Dog Cafe for lunch. Wow. No really. We enjoyed a nice glass of wine, with a view overlooking a beautiful winter scene of Mirror Lake, cross country skiers, and ADKs in the background. I went with the Maple Pulled Pork Sandwich, topped with coleslaw and blue cheese crumbles on a broiche. My mouth waters just thinking about it. I will definitely be going back! Continue reading

Québec City: Un avant-goût de France

That is to say “Quebec City: A Taste of France”. Not sure how Canadians (or the French) feel about that but considering the percentage of french speaking, and the old European town feel — I’m rolling with it.

I simply love Quebec City: the fortified walls, cobbled windy European streets, architecture, overlooking the St. Lawrence River and all within driving distance. Who could ask for more? Oh right, they love good coffee, chocolate and wine. So I guess I did ask for more.

The one thing I could do without on this recent trip – hitting a storm that caused roads from hell, all while trying to negotiate driving when I was coming down with a head cold. Once we got there, and I decided that I didn’t have to drive again until Sunday, all was right in the world. Ok the beer helped too:) Continue reading

Yes and Thank you: Snow!

It has not been a great year for snow. I’ve been downright cranky the past month or so. Don’t get me wrong – it’s still better than last year. But considering I had a broken elbow, and the big decision of the day was whether it was worth the pain to shower – that isn’t really the best comparison.

We got some late December snow, and I got a couple of good runs in, but then came the rain, and when we did get snow, a thaw would follow. Not to mention the subzero temperatures, that brought no new snow. I don’t mind cold, if it brings the fluffy white stuff to play in, but a polar vortex with no snow. Winter is Coming

Vermont in the winter is a winter wonderland.

Yep. It is that time of year when winter is coming. O.K. it is actually here since as I write this, it is minus 9 degrees, and that is not including windchill. Yeah. It is a bit chilly. But I’ll take it if it means I get to enjoy all the fun of the snow like snowshoeing, skiing and general prettiness. What I don’t like is the cold (and ice) when I get no use of it.

Like the epic ice storm we got a few weeks ago. Scrapping inches and inches off my car for days on end and literally needed a hammer to remove all the ice off my front steps. No fun at all. But here is to hoping that is behind us and the cold brings all the fluffy white stuff we can use.

It’s not winter in Burlington until you see hundred’s of Santa’s running down the road. Yes it is a tradition. And if you don’t like the color red, well, tough luck.

Church Street. It is always a great walking downtown, and though Christmas decorations (and music) aren’t really something I love (it is usually over done), Church Street is even more beautiful with snow, lights and the Christmas Tree. Also helps that there is no one around because it is too freaking cold. And cold, crisp sound of your shoes on the snow and nothing else is a sound that I will always yearn for. Continue reading

Recipe: Salted Caramel Cream Cheese Bars

UntitledLast year my sister sent me recipe from Made with Pink for salted caramel cheesecake bars. I love to bake (only wish I had more time – and skill).

I especially love Fat Toad’s Farm bourbon salted caramel and had been looking for a good recipe to try out. I adjusted the original recipe to use local products and made a couple of alterations. You can check out the original recipe here.

This is one of my favorite sweets to make. Seriously, delicious! If you don’t try it you are missing out. And to boot it is very simple — no really my first crack at it and I didn’t have any adjustments. That never happens.
